Our Thanksgiving meal cornbread stuffing was made with Glutino Yankee Cornbread & Muffin Mix. Since we are also eating dairy free, the only substitution was to replace the butter in the recipe with coconut oil.
It was very tasty and worked well with the other stuffing ingredients (onions, apple, olive oil). Honestly, I am not a fan of some of the Glutino pre-made frozen breads, but this was good. We will certainly be trying more of their gluten free baking mixes.
